Christmas Brownies
Squidgy, chocolatey, Christmassy.
Do chocolate brownies make you salivate? For us, even the mere mention of a gooey brownie is enough to make our mouths water.
Our Christmas Cream Liqueur is ready from Autumn and lasts through the festive season each year. This provides plenty of opportunity for sipping the creamy caramel liqueur by the fireside, accompanied by a dribble inducing brownie!.
2020 has seen many of us baking more than we usually would. We are no exception and took the chance to invent a brownie to relish over the festive season. To double the enjoyment, our Christmas brownies are made using our award-winning Christmas Cream Liqueur. With an optional cheesecake swirl and a generous portion of Christmas Cream Liqueur, they are a rich and indulgent treat.
This recipe makes approx 8 to 10 portions.
Ingredients
- 150g caster sugar
- 3 eggs
- 50ml Christmas Cream Liqueur
- 1 tsp vanilla essence
- 150g butter
- 100g melted dark chocolate
- 75g sieved cocoa
- 1/4 tsp salt
Topping (Optional Cheesecake Swirl)
- 50ml Christmas Cream Liqueur
- 100g cream cheese
- 1 egg yolk
- 25g caster sugar
- 25g plain flour
Method
- Preheat the oven to 180°C/350°F/Gas Mark 4.
- Whisk the 150g sugar, 3 eggs, 50ml Christmas Cream Liqueur and 1 tsp vanilla essence together and set aside.
- Beat 150g butter until soft. Slowly add the egg mixture until fully combined.
- Gently stir in the melted chocolate, cocoa and salt.
- Pour the mixture into a lined baking tray.
- For the optional cheesecake swirl, mix together all of the topping ingredients. Drizzle over the brownie mixture and swirl with a skewer.
- Bake in the oven for 20-30mins depending on how squidgy you like your brownies.
