Festive Millionaires Shortbread
Millionaires shortbread made with a good fat juicy layer of Christmas Cream Liqueur caramel. Yes please!
Feel free to play with the layer quantities. This version gives a really thick caramel layer, a decent chocolate layer and quite a slim shortbread layer. That’s because we love caramel!
Ingredients
Shortbread
- 225g plain flour
- 175g unsalted butter
- 125g caster sugar
Caramel
- 1 tin (397g) condensed milk
- 150g unsalted butter
- 50ml Christmas Cream Liqueur
- 150g dark brown soft sugar
Chocolate topping
- 200g dark chocolate
- 50g white chocolate
Method
- Line an 8-inch square tin with parchment paper
- Beat the butter and sugar together until light and fluffy, then mix in the flour
- Knead the mixture and press the dough into the tin, pushing down fully into each corner.
- Prick the base with a fork and chill for 30 minutes while preheating the oven to 180°C/350°F/Gas Mark 4
- Bake for 15 minutes and leave to cool thoroughly while you make the caramel
- In a large pan, gently melt the butter, sugar, and condensed milk. Once fully combined, bring to the boil, constantly stirring until the mixture thickens (about a minute)
- Take the pan off the heat and gently stir in the Christmas Cream Liqueur. Pour the caramel over the shortbread base
- Once the caramel has cooled and set, make the chocolate layer by melting the chocolates together in a heatproof dish for 30-60 seconds stirring frequently. Pour over the caramel, and leave to set for 10 mins before scoring portions. Leave to set fully
